
The Butler County Extension Office will host a “Cooking with Venison” workshop next week, giving residents a hands-on opportunity to learn how to prepare and cook the lean wild game meat.
Extension Program Coordinator Lesley Milius says the class will focus on understanding venison’s low fat content and how it compares to more familiar meats like beef and pork, including techniques to prevent it from drying out during cooking.
“What we’re going to be learning about is just kind of how venison, you know, it’s a very lean meat,” says Milius. “And so sometimes it cooks very similar to beef and pork and things like that. But it doesn’t sometimes have it’s it kind of mimics a little bit that pork a little bit with its leanness. And so it doesn’t have a whole lot of fat. And so sometimes, you know, you have to add a little bit to kind of bring that up a little bit so that it doesn’t dry the food that you’re eating.”
The class is designed for both hunters and non-hunters, offering a low-pressure way to try venison while also providing recipes that can be adapted to other meats people already have at home.
“Sometimes it’s just one of those things, if you want to come and kind of experience what it is, you don’t necessarily, you can go home and mimic the recipes yourself with a more readily available meat that you might have in your deep freezer,” says Milius.
The workshop is scheduled for Tuesday, Feb. 3, at 5:30 p.m. at the Butler County Extension Office. The cost to attend is $10.
